What is Bilberry Extract 25% Anthocyanins?

The anthocyanin in bilberry extract is a water-soluble pigment, which is mainly composed of a combination of five anthocyanins (cyanidin, delphinidin, quercetin, paeoniflorin, and petuniflorin) and three glycosides corresponding to them (3-O-glucoside, galactoside, and arabinoglycoside), respectively. Anthocyanins are hydrolyzed products of anthocyanin and do not contain glycosides.
