    Stachyose is an oligosaccharide composed of two molecules of alpha galactose, one molecule of alpha glucose, and one molecule of beta fructose as a tetrasaccharide unit. Under normal conditions, stachyose does not react with other chemicals such as additives and flavoring aids in food, nor does it affect the odor and taste of other substances. Therefore, it is a good functional food additive ingredient. The sweetness is relatively low, about 28.3% of sucrose, and can be used for low-sweetness foods or to mask the taste of some artificial sweeteners such as saccharin and phenylalanine.
