    Quercetin is a flavonoid compound widely distributed in the plant kingdom and is found in many vegetables, fruits, and herbs. Quercetin Dihydrate, also known as paclitaxel and Douglas fir, is a dihydroflavonol compound that belongs to the vitamin P family. Quercetin dihydrate, as its name implies, contains two crystalline waters in its structural formula. Quercetin anhydrous removes the two crystalline waters in the structural formula of quercetin dihydrate, and dihydroquercetin is the reduced form of quercetin, that is, the product of the hydrogenation of the double bond at the 2,3 position in the quercetin parent nucleus.
