    Oat Beta Glucan Powder is a water-soluble dietary fiber sourced from the plant oat, which is safe and edible. It can have some beneficial physiological functions on the human body due to its viscous nature that hinders the digestion and absorption of starch, protein and other substances. Oats are mainly composed of glumes and endosperm, which is wrapped by pericarp, seed coat, dextrins and sub-dextrins. Oat beta glucan is mainly located in the endosperm cell wall of its seed grain, and there is also a large amount of aggregation in the sub-dextrin layer.

     

    Oat beta glucan is extracted from oat bran. Currently, the commonly used methods of oat beta glucan extraction at home and abroad are water extraction, alkali extraction, acid extraction, ultrasonic extraction and so on. Liang Ying et al. added oat beta-glucan to yoghurt for testing and found that yoghurt with added oat beta-glucan had a smooth texture, delicate taste and milky flavour, and had good organoleptic properties. Oat β-glucan is a viscous polysaccharide, so adding it to yoghurt increases its viscosity and has a thickening effect. Yoghurt contains a large number of probiotics that are beneficial to intestinal health and the overall environment is acidic, but oat beta glucan is stable in yoghurt, with little change in water-holding capacity and viscosity over the shelf-life of the content.
