The experimental results showed that the bovine bone collagen peptide obtained by enzymatic hydrolysis of flavour protease and neutral protease had an inhibitory effect on Staphylococcus aureus; and the bovine collagen peptide obtained by enzymatic hydrolysis of animal complex protease, flavour protease and trypsin had an inhibitory effect on Salmonella enteritidis.
