What is Stachyose Powder?
Stachyose (molecular formula C24H42O21) is a powdered product made from plant as raw material, processed, extracted and refined. It is a tetrasaccharide consisting of 2 α-galactosides bound by α-1,6 glycosidic bond on the glucose side of sucrose, and belongs to the non-reducing functional oligosaccharides of the galactoside class of the genus Cotton Grain Sugar. Stachyose is soluble in water and belongs to soluble dietary fibre. Its osmotic pressure is close to that of sucrose, but its sweetness is only 22% of sucrose. It is not decomposed by human gastrointestinal digestive juices, and has good thermal stability, humectancy and hygroscopicity. Stachyose powder is a high quality functional food ingredient.
