    Phycocyanin is a natural edible blue pigment extracted and refined from Spirulina, the main component of which is phycocyanin. The extracted algal cyanin appears as a blue to dark blue powder. It is easily soluble in water, and the solution is bright blue to dark blue. The product has good stability to light and heat, and the pH value experiment found that the stable aqueous solution of algal blue between 4.5-8.0 is a bright sky blue, and the colour is relatively pure, close to the blue of the sky and the sea. It can be used in frozen drinks, candy, flavored drinks, jelly, and many other fields.
