What is D Tagatose?
Tagatose is a natural, low-calorie sweetener structurally similar to allulose, a ‘differential isomer’ of fructose. Tagatose is a ‘rare sugar’, found in tiny quantities in nature in fruits, cocoa, and dairy products. The sweetness of Tagatose is similar to that of sucrose, with 92% of the sweetness of sucrose, basically no bad odor or aftertaste, and it produces about 1/3 of the calories of sucrose, with an energy value of 1.5 kcal/g. Moreover, Tagatose is susceptible to Meladic reaction, can be caramelized at lower temperatures, and can therefore be used in dairy products, beverages, cereal products, confectionery, preserved fruits, and other food fields.

Low Energy
Animal studies have shown that Tagatose consumes more energy than it releases during metabolism, does not cause fat deposition, and provides much less energy than sucrose.
