Clitoria ternatea L. is the flower of the butterfly bean in the legume family Pteridophyta, named after the butterfly-like flower. As the aqueous solution of Butterfly Bean Flower contains a large amount of anthocyanin, the aqueous solution shows a magenta colour when it is strongly acidic, the stronger the acidity, the redder the colour. Nam dok anchan' is a syrupy, refreshing indigo drink usually consumed in Thailand made from butterfly pea flowers, honey, and sugar syrup. The flowers are also dipped in batter and deep-fried in Burmese and Thai cuisine. Butterfly pea flower tea is made from ternatea flowers and dried lemongrass and changes color depending on what is added to the liquid, with lemon juice turning it purple.
